It gets to be about 5pm here and I guarentee you that someone will ask, "What's for Dinner?" I will then almost guarentee you that I haven't a clue! Okay, sometimes I have some idea, but not often. It's gotten to the point this summer where Shaun will call on his way home asking me what I want to do for dinner? Pretty much meaning, where do you want to go? That's pretty sad, but I get so busy with the kids that when 3 or 4 o'clock come, I'm totally exhausted! If I have something in the works he is probably totally caught off guard. Stuffed Zucchini, Corn on the Cob, and
homemade bread!
YUMMMMY! The zucchini, which Christopher picked from Aunt Donna & Uncle Jim's garden, was HUGE so we invited Meme, Pepe & Aunt Valerie over for dinner. The corn on the cob was super yummy grown in upstate New York too. mmmmmmm...
I didn't realize how EZ making Stuffed Zucchini could be. I was out and about all day with the kids and still made this in a about an hour! I mixed rice-a-roni and hamburg. After I cut the zucchini in half, took out the seeds, I steamed it in a glass pan in the oven with foil on top for about ½ hour, then stuffed it put it back in the oven for about 20 minutes on 250, then 10 minutes before my guests arrived I put some spaghetti sauce and shreaded cheese on top and put back in the oven with no foil. It came out pretty good. It was also very pretty, but I don't have any pictures. Thanks for the recipe Aunt Donna.
